We have taken a 14th century spice mix, used to make Ypocras - a spiced red wine - and combined it with milk chocolate to create a fantastic and exotic spiced chocolate bar. The sense and depth of the flavours develops on the tongue to leave a sensation of warmth and floral spice.
The name Ypocras, also written as Hypocras, refers to Hippocrates, who is credited with inventing a sieve used for filtering spices from drinks. This Ypocras recipe comes from the 14th century collection of recipes, The Forme of Cury, written in the 1390s. Ypocras, is mentioned by Chaucer in both the Knight's Tale and the Merchant's Tale: “He drynketh ypocras, clarree, and vernage, Of spices hoote, t'encreessen his corage;” (Canterbury Tales).
