Pontac sauce may have been first served in London’s Lombard Street in the 17th century and named after its originator, Monsieur Pontack, proprietor of the Pontack’s Head Tavern. According to André Simon, this tavern was ‘London’s first fashionable eating house’. Jonathan Swift (author of Gulliver’s Travels) "found the wine dear at seven shillings a flagon". So some things never change!


Pontac sauce was enjoyed by the elite of 17th century London as an accompaniment to game and cold cuts of meat. It has a strong fruity flavour, and can also be used to add some flavour to sauces and gravy.
