Lambswool
Lambswool
Spice mix for mulled apple juice, cider or ale
Lambswool or Lamb's Wool is a recipe that has been used for wassailing for hundreds of years, using either mulled ale or cider. There is debate as to the origin of the name, but when the pulp of baked apple is added to the drink it thickens the brew and looks like lamb's wool. This mix can also be used with apple juice.
Method (serves: 4-6):
- Add the spice mix to 1 litre of apple juice, cider or ale.
- Slowly bring almost to the boil and serve.
- For a truly authentic taste, add some baked apple pulp to the drink before serving. Storage: Store in a cool, dry place. The ingredients will settle in the bag. Shake the bag well if you are not using the entire pack.
Ingredients: Sugar, Apple (Apple, SULPHUR DIOXIDE), Lemon, Cinnamon, Ginger.
