We have taken a 14th century spice mix of Galingale, Cinnamon, Grains of Paradise, and Pepper, used to make Clarrey, and combined it with milk chocolate to create an exotic spiced chocolate with a flavour profile of warmth and spice.
The name ‘Clarrey’ comes from the Latin vinum claratum, meaning ‘clarified wine’. The name survives today as ‘claret’. This Clarrey recipe comes from the 14th century collection of recipes, The Forme of Cury, written in the 1390s. Clarrey, or clarree, is mentioned by Chaucer in both the Knight's Tale and the Merchant's Tale: “He drynketh ypocras, clarree, and vernage, Of spices hoote, t'encreessen his corage;” (Canterbury Tales).
