The recipe for this herb mix comes from Livre fort excellent de Cuysine, published in Lyon in 1555. The inclusion of marigold petals may be a substitute for the more expensive saffron, but were believed to be a ‘comforter of the heart and spirits, and to expel any malignant or pestilential quality’ in their own right. They also provide a subtle yellow colouring.
Ingredients: Parsley, Thyme, Marjoram, Hyssop, Savoury, Sage, Marigold.
